spiced banana bread

Bananas are one of my favourite things ever, I can't get through the day without having one! On visits to the market or New Roots there's usually a bunch of brown bananas going for cheap as they need using. I always feel sorry for the little fellows and can't resist but buying them..and then I have a good excuse to make banana bread. I usually make it with walnuts and/or raisins with a little cinnamon in it, and I also like making a spiced one. With this one I wanted to have it plain but with the spice, and I wanted to make sure it was nice and moist so I had a browse on the net for some other recipes. I came across this great vegan blog..http://www.herbivoredinosaur.com/2010/10/spiced-banana-bread.html which had a lovely recipe for spiced banana bread and a couple of really useful tips which I used to make this bread. 1: make sure the marg you use is melted beforehand, and 2: don't over mix the batter, mix until everything is combined, this ensures a well moist and tasty bread.




Goes great with a brew :)
